Veggie Detox

Happy Hump Day! The first week back to work after vacation is always a bit of a drag, but thankfully it's going by quickly. I also have to say it feels good to be back to a normal eating routine after days filled with lobster & drawn butter and ice cream cones. Speaking of veggies, when we arrived home from Maine a few days ago, our garden was overflowing!


Thank goodness Matt's mom came over while we were away to water it. We've been living off the bounty for the last few days and loving all the fresh, juicy and crisp vegetables.


Peppers!


Both Matt and I felt like we needed a bit of a detox after vacation, so he's been juicing for the last few days. 


Vegetable juice = not my thing. So I've been on a veggie sandwich and salad kick instead.




Tonight we decided it was time to add a little something more to our dinner, so I whipped up some shrimp wraps with peppers and onions.


This was the quickest meal ever. I just seared some shrimp in a skillet with cooking spray, salt, pepper and garlic powder, then added garden peppers and onions to the skillet to soften them up a bit. I tossed the mixture on top of a low-carb wrap (I use Tumaro's) spread with a Laughing Cow Light cheese wedge, and dinner was served!

On the side we had garden zucchini rounds steamed up with olive oil, salt and pepper.


Perfect for a summer's night!
