Then I added 1/4 to 1/2 cup sharp provolone cheese (Corrado’s type) cut into tiny cubes and several hard boiled eggs chopped up. The other secret was that after I filled the peppers, I fried them carefully in a little olive or canola oil and then baked them topped with a little more tomato sauce. The peppers have so much more flavor. I think you could probably spray them with Pam and broil in the oven until lightly charred before filling them and get a similar result.
