Girl Time

Good morning! This weekend is flying by already, but has been filled with good things. Yesterday was the day of my good friend Lindsay's bridal shower, which turned out beautifully and was so much fun, but before we get to that let's back up a bit. I had a great lunch on Friday, so let's start there.

I packed this the night before:


And when lunchtime rolled around at work, I stuffed the goods into pita pockets and ate these:


This was a perfect way to use up leftover veggies. We had shredded carrots leftover from our eggrolls, lettuce and tomatoes that needed to get used up, and some fat free feta cheese leftover from the quinoa salad I made last week. The other day I brought some hummus and whole wheat pitas to work, so everything came together really easily. On the side I had some celery and carrot sticks that I prepped earlier in the week. Easy, veggie-filled lunch!

I left work a little early on Friday because my friends Nicole and Cathleen were coming over to get things ready for the bridal shower. Matt and I had a really quick dinner of tilapia sandwiches with lettuce, tomato and avocado before they got there (I was starving and inhaled it before I snapped a pic). While I was cleaning up, this happened:


If you can get past the un-sanitary-ness of this picture, how funny is this?? Butters was chasing after Maui like an idiot, and she got scared so jumped into the fridge while I was putting things away. They're a bunch of nut jobs.

When the girls arrived, we started the evening with a few glasses of wine and some Pirate's Booty for snacking. Love that stuff! Go ahead and laugh at Cathleen's giant hand. It's not really that big, but we were cracking up at this picture - she looks like she has giant man-hands ala Seinfeld. Ha!


We also sampled one of Matt's new brewing creations, a Smoked Coconut Stout.



We spent the rest of the evening chatting away and putting together favors for the shower.


More on these later! Chill Friday nights with the girls are always so much fun. We are all so busy all the time, but love when we make the time to get together and just hang out. We're all going to New Orleans in a few weeks for a little girls vacay before Lindsay gets married, and I am so looking forward to it!

Saturday

Saturday morning began with an unassuming little breakfast consisting of a toasted light English muffin with peanut butter and a refreshing, cold orange from the fridge.


The rest of the morning was spent running errands, having a little girly time (a new haircut and a manicure) and getting last minute things ready for the shower. We weren't going to eat at the shower until late afternoon, so I made sure to eat a lunch in between so I wouldn't overdose on bread and chocolate when I got to the restaurant.



I had a bowl of Muir Glen organic vegetable soup with a mini sandwich on the side - a flax seed Sandwich Thin with a little hummus, romaine lettuce and a slice of Havarti dill cheese.

And then, it was  bridal shower time! I'll share all the deets on that later. I'm off now to get things done around the house before meeting up with the girls again for dress fittings for Lindsay's wedding. Talk about a girlfriend-filled weekend! :)
